Cookies save the day

Hours of tough bus replacement service today (Šibenik to Zagreb) were relieved by strawberry and ginger oat cookies. Baspie dog and human loved them. He was so good and patient, 6 hours on a coach floor with only one comfort break!

These cookies are so simple to make and unsquashable, plus you can mess around with the ingredients:

1) Rolled oats, just covered in soya milk and left in the fridge for 2-12 hours
2) zest of 1 lemon & juice of half lemon
3) handful of chopped almonds or other nuts
4) grated ginger (2-3cm³)
5) at least half as many strawberries as oats, chopped small and slightly mashed
6) pinch of black pepper, 1 teaspoon of cinnamon
7) tablespoon or two of veg oil
8) mix it all together, adding a little flour if it seems too wet, to avoid it running. Spoon onto baking parchment or a greased non stick baking tray and cook in a medium (175C) oven for about 20 minutes, until they hold together well but are not dried out or heavily browned.

If you don’t have an oven, the mix is delicious uncooked, but I didn’t try it on Baspie. He’s less fond of gloop. You could also try microwaving for maybe 2-3 minutes a few at a time. How long would depend on how soggy your mix is.

For alternatives, try other fruits and nuts, orange instead of lemon, alternative spices, dried ginger. Water could work if you don’t have a plant milk.

Baspie much prefers the smoothness of trains to a vibrating tipping coach. To add insult to injury, the driver didn’t want to take him. The feeling was mutual, we didn’t want a coach, but no choice. I had checked at the station office and they said it was fine as he’s small. Really tough for larger dogs when this change is sprung upon them!
