
Shopping went a bit wrong yesterday, and I didn’t want to get my stove out as it was too cold to cook outside after a lovely sunset. But dinner was unexpectedly yummy.

Only carb was rolled oats, so I soaked some. Chopped up tempeh, lambs lettuce, fresh mint. Added fresh lime juice, hazelnut butter, smoked paprika. Mixed all up together and Baspie loved it too. This tempeh salad used all the expensive ingredients from Eko Platz in Maastricht in one go, but it was worth it.
